Why Is It So Hard to Find Ice Cream Without Additives?

Pick up almost any pint at the grocery store and read the ingredients. Alongside cream and sugar you’ll usually find guar gum, carrageenan, cellulose gum, mono- and diglycerides, “natural flavors,” and artificial colors. None of those belong in ice cream — they’re there to let manufacturers whip in more air, survive weeks of warehouse storage, and imitate the texture that real cream produces on its own.

Real ice cream doesn’t need any of it. Ice cream made the traditional way needs exactly what it needed a hundred years ago: cream, milk, sweetener, eggs or gelatin, and real flavor ingredients. That’s it.

What’s Actually in Our Ice Cream

Here’s the complete ingredient philosophy behind every pint we make on our farm:

  • A2A2 organic grass-fed cream and milk — from our own DNA-tested Jersey herd, non-homogenized and vat pasteurized
  • Milk solids — concentrated milk that gives every pint its dense, creamy body and its protein, doing naturally what gums and stabilizers do in commercial ice cream
  • Organic evaporated cane juice — an unrefined sweetener, never white refined sugar or corn syrup
  • Real flavor ingredients — organic vanilla extract, organic cocoa, real fruit, organic maple syrup
  • Non-GMO beef gelatin — the traditional thickener ice cream makers used before gums existed

What you will never find: gums, carrageenan, emulsifiers, stabilizers, artificial flavors, artificial colors, or preservatives. If you can’t picture the ingredient in a farm kitchen, it isn’t in our ice cream.

The “25% More Ice Cream” Secret

Here’s something most people don’t know: commercial ice cream is whipped with up to 50% air (the industry calls it “overrun”), and those gums and emulsifiers are what hold all that air in. Skip the additives and you can’t inflate the pint — which is why our pints weigh noticeably more than store-bought. You’re getting roughly 25% more actual ice cream per pint, not frozen foam.

How to Read Any Ice Cream Label

Whether you buy from us or anyone else, here’s the quick test:

  • Count the ingredients. Real ice cream rarely needs more than 5–7 per flavor.
  • Look for gums and “-ides.” Guar gum, xanthan gum, carrageenan, mono- and diglycerides — all signs of industrial shortcuts.
  • “Natural flavors” is not a flavor. Real vanilla ice cream says “vanilla extract,” not a chemistry catch-all.
  • Check the weight. A heavier pint means less whipped-in air and more actual food.
