Vat pasteurization — also called batch pasteurization or low-temperature, long-time pasteurization — is the original method of making milk safe: the milk is warmed gently in a large vat and held at that temperature for 30 minutes. It’s the slowest form of pasteurization, and the gentlest.
On our farm, we vat pasteurize at 155°F for 30 minutes. Compare that to the ultra-high-temperature processing used for most store-bought dairy, which blasts milk to around 280°F. Both methods make milk safe — but they don’t leave the milk the same.
| Method | Temperature | Time | What it means for the milk |
|---|---|---|---|
| Vat (batch) — what we use | 145–155°F | 30 minutes | Gentle heat preserves natural enzymes, flavor compounds, and more of the milk’s original character |
| HTST (“high-temp, short-time”) | 161°F | 15 seconds | The standard for most grocery-store milk; faster, hotter, more flavor loss |
| UHT (“ultra-pasteurized”) | ~280°F | 2 seconds | Shelf-stable but cooked; heat-sensitive nutrients and delicate flavors are largely destroyed |
If you’ve ever noticed that ultra-pasteurized milk tastes flat or slightly “cooked,” that’s the temperature difference you’re tasting.

Completely. Vat pasteurization is a fully recognized, regulated pasteurization method — it meets all food-safety standards, and our facility is New York State inspected. The 30-minute hold time does the same job as high heat; it just does it gently.
These two words get confused constantly, but they’re completely different processes:
Milk can be pasteurized without being homogenized — and ours is. We vat pasteurize for safety, but we never homogenize. The cream stays in its natural state, which is why real non-homogenized milk shows a cream line at the top. You can read more about that on our process page.
Vat pasteurization is slower, smaller-batch, and more work than modern methods — that’s exactly why big dairies don’t use it. We use it because:
Every pint of our ice cream is made from vat-pasteurized, non-homogenized, A2A2 organic grass-fed milk from our own herd. That combination is nearly impossible to find in a store — and it’s why our ice cream tastes the way ice cream used to.
“I bought multiple flavors and each one was delicious. Creamy and very flavorful. The A2A2 milk is gentle on your stomach — after eating I did not experience any discomfort. Highly recommend.”
— Jenny Shvartser“Hands down the best ice cream we’ve ever had. You can taste that it’s real, and it arrived perfectly frozen.”
— Jan Hurst“Shipping was fast and everything was still solid. My whole family is obsessed. So glad we found you.”

Vat (or batch) pasteurization means the milk is warmed gently in a vat — to at least 145°F, held for 30 minutes — instead of being flash-heated. It’s the original, low-temperature way to make milk safe while preserving its natural qualities. We pasteurize at 155°F for 30 minutes.
Temperature and time. Vat pasteurization holds milk at 145–155°F for 30 minutes; ultra-pasteurization blasts it to roughly 280°F for about 2 seconds. Both are safe, but ultra-pasteurization destroys heat-sensitive enzymes and flavor compounds that vat pasteurization preserves.
No. Vat-pasteurized milk is fully pasteurized and meets all safety regulations — it’s simply pasteurized gently. Raw milk is unpasteurized.
Most people say yes. Because the gentle heat preserves the milk’s natural flavor compounds, vat-pasteurized dairy tastes fresher and richer — closer to the way milk tastes on the farm.
Not necessarily — they’re separate processes. Ours is vat pasteurized AND non-homogenized: safe from heat treatment, but with the natural cream structure completely intact.
